Be My Guest - Almond Barfi


Today's a Saturday, and I have a beautiful lady accompanying me today as my guest. You will all agree to me that she is a pretty woman, who cooks delicious food, clicks droolicious pictures with a white pristine background and makes you feel a part of her neighborhood with lovely story telling and yummy recipes. I am talking of non other than Rekha, who blogs at Food0licious Pictured.

She was one blogger I silently ignored in the beginning. And it was not intentional, I thought I was already following her blog. One day, I simply clicked on her name during one of the comments that she had posted because I became confused whether I was actually following her blog. What I got was a beautiful looking blog, with such lovely pictures that I kept wondering, why hadn't I checked earlier. From then on, I've been a regular on her page. Each time she posts on FB and on her blog, I made sure I spend a couple of minutes admiring the pictures of the food that she cooks. Sometimes, I really feel that despite cutting down on eating and controlling myself so much,  I am not losing weight because of seeing all these yummy pictures on the blogosphere, including hers... I guess some serious research needs to go into this for sure...hehe...

So without much delay, let me go on to what she had to offer for us, the yummilicious Almond Barfi... slurp!!!


Hello to all the Big Sweet Tooth readers!

Before I move onto the recipe, I would like to thank Rafee for letting me do the post.  Like many I too met Rafee here in the blog world. Inspite of being a working mom she is such a regular here which leaves me wondering from where she gets the time and energy to cook and post. But sure her posts make you laugh, think and beyond all you just fall in love with food all over again.  That’s been Rafee and her very big sweet tooth for me. Wish you always the best in life Rafee.


And a little of me, I am from Kerala and settled in Singapore; living with my husband and our daughter who is 5 now. A HR consultant by profession.  Cooking is something I have always loved to do but it really took off only after I came to Singapore.  The amalgam of cuisines here inspired me big time into culinary world and when I decided to record all my hits and trials, Foodolicious Pictured was born.  Photography and styling is something I love doing and hence you will see that my posts are loaded with photographs.

Over to the recipe, I am a big fan of burfi , especially the coconut burfi. I can’t stop with one.  This is the first time I tried making one.  Its quite easy and since almonds being my favourite, I didn’t had to think twice about the medium. I hope you like it too. 

Almond burfi

You need –

Unsalted butter – 75 grams
Single cream – 150 mls
Ground almonds – 200 grams
Sugar – 200 grams
Rose water – few drops
Cardamom powder – a pinch
Pistachios, chopped to garnish – 10-20 nos

How to –

Melt butter in a non-stick pan. Make sure not to burn the butter.  Add in the sugar, ground almonds, cream, rose water and cardamom powder.  On a low flame; stir constantly and cook till the sugar is melted and everything is well combined.

Increase the heat and cook till the mixture turns light brown.  Turn off the heat and transfer the Almond mixture to a large, square dish and smooth the top with the back of a spoon.

Decorate the top with chopped pistachios and allow to set for at least an hour. Once set, cut into diamond shape and serve.
